Ground Beef and Dumplings
Ground Beef and Dumplings are the ultimate comfort food for me. I grew up with my mom making them, and hers were hands down (literally) some of the best I have ever had. The ingredients she used varied from batch to batch; she would just throw a little bit in here or there without measuring anything out!
Ingredients:
- 1 teaspoon olive oil
- 1 lb lean ground beef
- 1 cup diced yellow onion
- 1 tablespoon chopped garlic
- 1 tablespoon Italian seasoning
- 10.5 oz condensed cheddar soup
- 10.5 oz condensed cream of bacon soup
- 2 cups chicken broth
- 2 cups half and half
- 2 cups frozen mixed vegetables
- 1 can refrigerated biscuit dough ( I used a 12 oz package with 10 biscuits)
Instructions:
- Heat the olive oil in a large pot or Dutch oven over medium-high heat.
- Add the ground beef to the pot and crumble it well.
- Add the diced onions to the ground beef. Stir well and continue cooking until the ground beef is fully browned and the onions are translucent.
- Add the chopped garlic and Italian seasoning. Stir well and cook for about 1 minute.
- Add the cheddar soup, cream of bacon soup, chicken broth and half and half to the pot. Stir until all of the ingredients are well combined.
- Add the frozen mixed veggies to the pot and stir well. Bring to a boil.
- While waiting for the liquid to boil, open the package of biscuits and cut each biscuit into 6 pieces.
- Once the liquid is boiling, add the biscuit dough pieces to the pot.
- Stir well, place a lid on the pot and reduce the heat to medium-low. Leave to simmer for 15 minutes.
- After 15 minutes remove the lid from the pot and stir well. Remove the pot from the heat and let the dish rest for a few minutes to thicken up.
