Country Apple Fritter Bread

Ingredients:
For the Bread:
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup light brown sugar
- 1/2 teaspoon salt
- 1/2 teaspoon baking powder
- 1/2 teaspoon ground cinnamon
- 2 large eggs
- 1/2 cup unsalted butter, melted
- 1/2 cup milk
- 1 teaspoon vanilla extract
- 2 large apples, peeled, cored, and chopped
- 1/4 cup granulated sugar (for apples)
- 1 teaspoon ground cinnamon (for apples)
For the Glaze:
- 1 cup powdered sugar
- 2-3 tablespoons milk
- 1/2 teaspoon vanilla extract
Instructions:
- Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan.
- In a small bowl, mix together the chopped apples, 1/4 cup granulated sugar, and 1 teaspoon ground cinnamon. Set aside.
- In a large bowl, whisk together the flour, granulated sugar, light brown sugar, salt, baking powder, and ground cinnamon.
- In a separate bowl, whisk together the eggs, melted butter, milk, and vanilla extract until well combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
- Pour half of the batter into the prepared loaf pan. Evenly distribute half of the apple mixture over the batter. Pour the remaining batter over the apples, then top with the remaining apple mixture.
- Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- While the bread is baking, prepare the glaze by whisking together the powdered sugar, milk, and vanilla extract in a small bowl. Add more milk if needed to reach your desired consistency.
- Once the bread is done baking, remove it from the oven and let it cool in the pan for about 10 minutes. Then transfer the bread to a wire rack and drizzle the glaze over the top while it's still warm.
