Beef Wellington

I threw a party over the weekend and served this beef wellington as one of my entrees. Everyone loved it so I thought I would share the recipe. It's a great substitute to the same old steak dinner :)

What a beef wellington is, it's basically beef (usually tenderloin), mushrooms and puff pastry baked in an oven. Since I was doing this for a party and I like to get as much prep work done ahead of time as I can, I made the mushrooms the night before. I used Cremini mushrooms (baby portabellas) but you can use white button mushrooms, portabellas or any other ones that you love. I chopped the mushrooms into small pieces and got them into a large pan with olive oil.


Start cooking them on medium high heat until all the liquid that they released cooks out. Add salt, 2 cloves of sliced garlic, a splash of wine and some black pepper. Turn off the heat after the wine cooks out.

I did the rest of the required steps on the day of the party. I normally use a big piece of tenderloin for this recipe, but they didn't have any tendereloin at the store that day, and the New York Steak looked amazing, so I went with the steak :)


I took the New York Steak and cut it in half. So I made my 4 big steaks into 8 portions.


Season the meat with salt and ground black pepper and sear in a hot pan for a couple of minutes on each side.




Since this will continue cooking in the oven for about 10 more minutes, you don't want to overcook the meat. So if you like it well done, cook it on the stove until it's about medium, so that it's well done when you get it out of the oven. If you like your steak medium, then sear the meat for about 1 minute on each side and get it out of the pan (it'll cook in the oven later). Ones the steak is seared on each side, get it out of the pan and onto a plate for it to cool down. You don't want to put the hot steak on a cold puff pastry. As soon as the steak cools down, take the puff pastry, roll it out a bit, get the mushroom on the puff pastry, then put the steak on top (just like you see in the pic below).


I put 2 steaks (1 cut into 2 pieces) per puff pastry sheet


Roll up the puff pastry and completely cover all the sides and seal all the ends.


Brush with egg wash and bake in a 425 degree oven for about 10-15 minutes. Serve and enjoy! Try this one, it's amazing!
